My Vintage Recipe: Old Fashion Cottage Cheese Salad perfect for your buffet Spring
Browsing through my collection of old recipes I am fashion came across these recipes for salads with cottage cheese. The two seem perfect for spring, summer, holidays, etc. They seem especially equipped for buffet, but would be ideal for any occasion or meal. The pecan salad with cottage cheese is really different from your average salad. Cottage cheese Mandarin Orange Salad is really quick and easy.
Cottage cheese PECAN SALAD
This recipe is from a lady who was a friend of my late mother several years ago.
1 cup chopped celery
One cup chopped green pepper
1 / 2 c. salt
1 cup chopped pecans
2 cups crushed pineapple, drained – reserve 1 / 4 cup juice
1 / 4 cup pineapple juice Hot
2 cups cottage cheese
1 tsp tablespoon unflavored gelatin
1 / 4 cup water
1 / 4 cup mayonnaise
1 / 2 cup powdered sugar
1 / 2 cup whipped cream
Mix celery, bell pepper, salt and pecans together and set aside. Soften unflavored gelatin in 1 / 4 cup water for 5 minutes, add the hot pineapple juice and stir until gelatin is dissolved. Stir in pineapple and let cool. Mix cottage cheese, mayonnaise and sugar together in a large bowl, fold in whipped cream. Add celery mixture, mixing in well. Embed gelatin mixture and refrigerate until firm.

A large gelatin Orange Box
1 large can crushed pineapple, drained
1 can mandarin oranges, drained
1 small carton frozen whipped topping, thawed
In a large bowl, combine cottage cheese and gelatin dry. Add pineapple and oranges and stir in. Stir gently whipped topping. Chill all day or all night.
