what is a good side dish to make with barbeque pork sandwiches for the super bowl?
i don’t want something where you have to buy twenty things for. i would like a recipe for something simple but different.
Macaroni Salad. Cheap to make and it makes lots of it. You can modifiy this basic recipe to your liking. I like to add about two Tablespoons of sweet relish and more onions than the recipe calls for. Leave out what you do not like. Add it other favorites. Don’t like celery? Use red or green bell pepper, or nothing. Like it a bit more savory? Mix in some dill. Make it your own. While maybe not a good idea with pork, I often add in a small bag of salad shrimp.
Ingredients:
•2 cups cooked macaroni, drained, rinsed, cooled
•2 hard-cooked eggs, chopped
•1/4 cup chopped celery
•1/4 cup chopped onion
•1/3 to 1/2 cup mayonnaise or salad dressing
•2 teaspoons sugar
•2 teaspoons vinegar
•1/2 teaspoon salt, or to taste
•1/2 teaspoon prepared mustard
•pepper, to taste
Preparation:
Combine all macaroni salad recipe ingredients, using about 1/3 cup of mayonnaise and stir well. Add a little more mayonnaise, if necessary. Taste and adjust seasonings. Cover and chill for several hours before serving.
